5 lb pork roast
2 sticks butter
5 quartered potatoes
2 onions (chopped)
salt and pepper to taste

**Preheat oven to 450º
>Salt and pepper roast.
>Place in roasting pan.
>Put in 450º oven for 20 minutes to brown.
>Lower heat to 350º.
>Place 1 stick of butter in pan.
>Cook for 1 1/2 hours more (if it gets too dry add a little water)
>After 1 hour and 45 minutes of cooking time add potatoes and onions, and another stick of butter.
>Baste about every 10 minutes.
>Total cooking time 3 hours.
