1 lb hamburger
1 onion, diced
2 26 oz containers marinara sauce
1 lb rigatoni
2 eggs
1 carton cottage cheese or ricotta cheese
3/4 cup cup grated Parmesan cheese
1 tbsp dried parsley
3 cups shredded mozzarella cheese

Cook hamburger with onion. Season with salt and pepper & drain. Mix with marinara sauce. Cook rigatoni and drain. In a small bowl beat eggs, then stir in cottage or ricotta cheese, Parmesan cheese, and parsley. In a lg sprayed pan spread 2 cups of sauce on the bottom. Place half of the rigatoni on top. Sprinkle on half of the egg mixture (as best you can) then top with 1 cup cheese. Pour on 2 more cups sauce, remaining rigatoni, egg mixture and 1 more cup cheese. Pour on remaining sauce and sprinkle on the last cup of cheese. Cover with foil and bake at 375º for 60-70 min or until bubbly. Remove foil and bake 5 more min or until cheese is melted. Let sit 10-15 min before serving.
