Ingredients: Ingredients for ricotta- 3 lbs ricotta 1 8 oz cream cheese 2 cups sugar 2 T orange juice 2 T lemon juice 2 tsp vanilla 1 orange rind 8 - 9 eggs ______ Ingredients for wheat preparation- 1 1/4 lb soaked wheat Water for soaking 3 cups for boiling, 1tsp salt 2 cups scalded milk 1 tsp sugar

Directions:>Prepare 2 cups wheat ahead of time by covering with water and soak for 24 hours, drain cover with 3 cups of water add 1 tsp salt and boil 1 hour in covered saucepan, turning frequently to prevent sticking, drain water and add 2 cups scalded milk, 1 tsp sugar and boil an additional 5 minutes....remove from heat and cool. ________________________________ >Cream together ricotta and cream cheese until smooth. >Add sugar and juices. >Beat in one egg at a time. >Add rind with spoon. >Fold in prepared wheat >Pour into prepared pie crust and bake until firm in center and crust is nicely browned. >Let cool in oven. |
