1 cup oatmeal (instant)
1 1/2 cups hot water
1/2 cup vegetable oil
1 cup brown sugar
1 cup white sugar
1 1/3 cups self-rising flour
1 teaspoon baking soda
1 teaspoon cinnamon
1/2 teaspoon salt
2 eggs

Frosting:
1 stick butter
1 tablespoon milk
1 cup light brown sugar
1 can coconut milk
1 cup pecans, chopped

Directions:
Directions:
Preheat oven to 350°. Mix oatmeal with hot water. While it’s cooling, mix together oil and sugars. Combine oatmeal, dry ingredients and oil and beat together with eggs. Pour the whole thing in a greased 9x13” pan and bake at 350° for about 30 minutes or until toothpick stuck in center comes out clean. Once it’s done, stir together frosting ingredients, heat until thick, and pour over the cake. Broil a minute ‘til the frosting browns and enjoy!
