1 pound sharp cheddar cheese, grated
1/4 cup mayonnaise
1/4 cup buttermilk
1/4 onion, diced
1 2-ounce can pimentos, diced and drained, juice reserved
1/2 teaspoon cayenne pepper

Directions:
Directions:
Combine cheese, mayonnaise and buttermilk. Stir in onion and pimientos. (Be sure to save the pimiento juice. You’ll need it to help work with the cheese.) Okay, season with cayenne pepper and that’s it! This cheese spread will keep in the refrigerator for several days. You can enjoy it on fresh bread or stuffed in the hollow of a celery stick – but you’ll enjoy it ‘cause you’re eating Southern now.
