9 eggs
2 cups baby spinach
8 strips of cooked bacon, crumbled
3/4 cup shredded sharp cheddar, separated
1/2 sweet onion, sliced and caramelized
1 clove of garlic, minced
salt and pepper, to taste

Directions:
Directions:
Preheat oven to 400ºF. Grease an 8-inch or 9-inch pie pan with butter or oil. Set aside.
Combine all ingredients in a large mixing bowl and stir until everything is evenly distributed.
Bake for 25-30 minutes or until the egg is no longer raw. Cut into 4 slices and serve warm.
