1st day: Wash fruit and slice very thin without peeling. Remove seeds and cores. Measure sliced fruit and for each cup add 3 cups cold water. Let stand 24 hours. 2nd day: Heat the mixture to boiling; boil 15 minutes and again let stand another 24 hours. 3rd day: Measure 3 cups mixture into large saucepan. Add 3 cups sugar and boil rapidly, stirring often, for about 20 - 30 minutes until jellying point is reached. Stir and skim for a few minutes to prevent floating. Pour into hot sterilized jars and seal. Repeat in 3 cup batches until all is used. Cooking in small amounts gives a more delicate flavor. Makes 5 pints.
