1 box plain yellow cake mix
1/2 cup brown sugar
2 very ripe medium bananas peeled and mashed (about 1 cup)
3/4 cup sour cream
1/2 cup oil
3 large eggs
1 teaspoon ground cinnamon
1/2 to 3/4 cup chopped nuts

Directions:

Preheat oven to 350º and lightly spray 2 loaf pans (or 4 mini loaf pans) with non-stick spray. Dump all ingedients into a big mixing bowl and blend either by hand or mixer until everything is well incorporated. Divide batter among prepared pans and place them into oven, side by side. Cook mini's for 20 minutes and check. Regular loaves take about 40 minutes. Cool and serve.
