1 box cake mix (my fave is red velvet but any flavor will work)
1 stick of room temperature butter
2 teaspoons good vanilla extract
2 eggs, beaten
Optional add-ins chosen based on flavor of cake mix - for red velvet I use white chocolate chips, but you could use nuts, chocolate chips, toffee, etc.

Preheat oven to 375º.
Mix the cake mix, butter, vanilla and eggs in a large bowl until smooth. This will be a relatively thick batter, I use a stand mixer with great results.
Add in chips and/or whatever mix-ins you choose.
Drop by rounded tablespoonfuls onto a baking sheet, about 2" apart.
Bake 8 to 10 minutes but check them at 8 minutes because if you like them chewy you'll want to take them out before they actually look done.
Cool slightly before removing from baking sheet.
Yield will depend on the size of the cookies and how much cookie dough you eat as soon as they come out of the oven!
