Carrie Irwin lived at 610 Erie Street and in the 1950-1960s rented two rooms to Dr. Geoffrey Corson, a surgeon at Polyclinic Hospital. He used the rooms for General Practice physician services to the Dauphin community. Carrie knew he had a weakness for sweets and would often make him a plate of fudge on office days. Dr. Corson loved the fudge so much that he asked her for the recipe, and it has held a treasured place in the Corson recipe file ever since.
