4 cups diced zucchini squash (peeled)
1 cup water
1/4 cup chopped onion
1 lb. hamburger
1 can cream of mushroom soup
1 cup raw shredded carrots
1 pkg. dry stuffing mix (Pork Stove Top)
1/2 cup melted butter
1 cup sour cream

Directions:
Directions:
Preheat oven to 350º. Boil zucchini in the water for 5 minutes & drain. Brown hamburger & onion & drain. To the hamburger, add soup, sour cream & carrots. Mix well & set aside. Toss dry stuffing mix with butter. Sprinkle 1/2 of stuffing mix in 9 x 13 pan. Spoon zucchini onto stuffing. Pour hamburger mixture on top. Add remaining stuffing mixture on top of hamburger mixture. Bake for 30 minutes.
