1 cup uncooked orzo
1 Tbs olive oil
1 1/2 cups diced tomato
3/4 cup sliced gree onion
1/2 - 3/4 cup crumbled feta cheese
1 tsp grated lemon rind
1 Tbs fresh lemon juice
1/4 tsp salt
1/4 tsp black pepper
3/4 lb large shrimp - peeled and deveined
1/4 cup chopped fresh basil

Preheat oven to 450º

Make a pouch with aluminum foil and spray with cooking spray.

Cook the pasta in boiling water for 5 minutes. Drain. Place in a large bowl and stir in half the olive oil. Add the rest of the ingredients through black pepper.

Place in foil pouch. Arrange the shrimp on top and sprinkle with basil.

Seal the pouch and bake for 25 minutes. Cut the pouch open and drizzle with olive oil.

I sometimes stir the basil into the orzo mixture - especially if using dried.
I'm probably also more generouse with the olive oil than the recipe calls for.
