1¾ cups flour
1 cup strong coffee
2 cups sugar
1 cup buttermilk (or 1 tablespoon vinegar plus milk to equal 1 cup)
¾ cup cocoa
½ cup vegetable oil
2 teaspoons baking soda
1 teaspoon vanilla
1 teaspoon baking powder
1 teaspoon salt
2 eggs

Directions:
Combine dry ingredients in large mixer bowl. Add remaining ingredients, beat at medium speed for 2 minutes. Batter will be thin. Pour into greased and floured 9 x 13 cake pan. Bake at 350 degrees for 35 to 40 minutes or until cake tester comes out clean. Cool completely; frost.
