1 cup of uncooked red quinoa (2 cups cooked)
1,5 cups of water
1/2 cup fresh lemon or lime juice
1/4 cup or less olive oil
1 cup onion, finely chopped (Red or White to your taste)
2-4 garlic cloves, finely chopped
1 cup parsley, chopped (Curly or Flat Leaf to your taste)
1 English cucumber, cut into 1/2 inch cubes
4 plum tomatoes, cut into 1/2 inch cubes
Salt to taste

Or substitute 1 Cup Couscous for Quinoa

If Using Quinoa:
Rinse quinoa, and steam it with water and lemon in the saucepan until cooked for 25-30 minutes.
Alternatively, rinse quinoa and soak it in the water and lemon overnight, cook on medium for 10-15 minutes.
Transfer quinoa into the bowl; cool it and add salt and olive oil.

If using Couscous
Bring water and lemon juice to a boil.
Remove pot from heat and add couscous.
Let steam for 5 minutes, then put in bowl and fluff.

After cooking Quinoa or Couscous:
Add chopped onion, garlic and parsley, mix well.
Add tomatoes and cucumbers. Toss.
Cool and serve.
