1/2 cup unsweetened cocoa
1 tsp. baking powder
1/2 tsp. baking soda
1/4 tsp. salt
1/4 tsp. finely ground black pepper
1 1/2 tsp. cinnamon
1/2 tsp. ground ginger
1/4 tsp. ground nutmeg
3/4 cup butter or margarine (softened)
1/2 cup packed light brown sugar
1/2 cup plus 1/3 cup granulated sugar
2 ounces semisweet chocolate, melted and cooled
1 tsp. vanilla extract
1 large egg

On a sheet of waxed paper combine flour, cocoa, baking powder, baking soda, salt, pepper and spices.

In a large bowl with mixer at medium speed beat butter with brown sugar and 1/2 cup of granulated sugar until creamy, occasionally scraping the side of the bowl with rubber spatula. Beat in chocolate, vanilla and egg until combined. Reduce speed to low; gradually add flour mixture and beat until blended, occasionally scraping bowl.

Divide dough in half. On sheet of plastic wrap or parchment paper shape half of dough into a 10" by 2" by 1" brick (or into a round cylinder approximately 10" long). Wrap brick in plastic wrap and repeat with other half of dough. Refrigerate bricks at least 2 hours or overnight until dough is firm enough to slice. (Or place in freezer for 30 minutes).

Preheat oven to 350º. Place remaining 1/3 cup of granulated sugar in a small bowl. Remove one brick from refrigerator cut crosswise into scant 1/4 inch slices. Dip each slice on both sides in granulated sugar. Place slices 1 inch apart on cookie sheet.

Bake cookies 12 minutes, allow cookies to remain on cookie sheet one minute after they come out of the oven before transferring to a cooling rack.

Store cookies in airtight container for up to 2 weeks.

I make these cookies at Christmas time - the dough freezes beautifully and can be made well ahead.

The cookies have a deep chocolate flavour and can be used to make ice cream sandwiches too!
