1 cup cooked rice
2 tbsp. butter
3 tbsp. flour
3/4 cup milk
8 ounces grated cheddar cheese
4 eggs (separated)
1/2 tsp. salt
dash cayenne pepper

Directions:
Directions:
Preheat oven to 325º

Grease 1 1/2 quart baking dish. Melt margarine in a double boiler, then add flour mixing well. Add milk gradually and cook until thick; then add cheese. Stir until cheese is melted. Separate 4 eggs. To the egg yolks add salt and pepper and mix with a fork. Slowly add egg yolk mixture to cheese mixture stirring constantly. Remove from heat and fold in rice. Beat egg whites until stiff but not dry and fold gently into cheese/rice mixture. Pour into greased casserole. For a crown on the soufflé, make a shallow path around casserole, 1 inch from the edge. Bake for 40 minutes and serve immediately.
