5 lb. red bliss potatoes, skin on
1 dozen eggs
1 stalk celery hearts
1 large yellow onion
1/2 c. white vinegar
1/2 c. sugar
1 tbsp. yellow mustard
1 1/2 c. mayonnaise (Duke's or Hellman's)
1/2 c. miracle whip
1 to 2 tbsp. celery seed
1/4 c. diced sweet gherkins or pickle relish
salt and pepper to taste
1 green pepper
sweet paprika

Boil potatoes in a big pot with eggs. Cut celery into bite-size pieces, set aside. Cut onion into small pieces and put in a bowl with vinegar and sugar. Put yellow mustard and 1 tbsp.of the vinegar/sugar mix from the onions in a large bowl. Add mayo, miracle whip, celery seed, and mix well. When potatoes are fork-tender, drain water. Peel 2 potatoes by hand and cut in half to cool. Peel 1 egg, cool. Chop 2 potatoes into chunks, cut eggs into a very fine dice, and put in a bowl with a little of the celery, a little of the onions drained, and pickles. Salt and pepper then put a large spoon full of mayo on egg and potatoes. Repeat but the 2nd time use only the yellow of the egg. The third time use the full egg. Stir and check to see if more dressing is needed. Sometimes potatoes soak in more than others. Cut green peppers into rings and place them on top for garnish. sprinkle generously with sweet paprika.
