1 1/2 lb. carrots, cut on the diagonal into 2" lengths and halved lengthwise if thick.
1 tbsp. olive oil
coarse salt and fresh ground pepper
1 tbsp. honey

Directions:
Directions:
Toss carrots with oil, salt, and pepper. Place on a baking sheet and roast for 30 minutes at 425º, turning once until tender. Remove from oven and toss with honey.
