4-6 chicken breasts
1/3 cup flour
1/2 tsp salt
1/2 tsp pepper
1 tbsp. butter
2 tbsp. parsley
1 tbsp. olive oil
1 1/2 cup chicken stock
2 tbsp. lemon juice
1 tbsp. white wine
2 cups rice
2 tbsp. olive oil

Directions:

- Heat 2 tbsp. olive oil to a medium high heat. Start water to boil rice
- Add chicken to a bag with flour, salt and pepper - shake to coat lightly. Saute chicken 4-5 minutes per side until lightly golden. Add sauce ingredients and simmer an additional 20-30 minutes on lowered heat, until sauce has thickened slightly.
- add rice to a pot with 4 cups of water, bring to a boil and stir
- once boiling, reduce heat and simmer for 20 minutes or until all water is evaporated. Fluff with a fork.
