"I have long believed that good food, good eating is all about risk. Whether we're talking about unpasteurized Stilton, raw oysters or working for organized crime 'associates,' food, for me, has always been an adventure."--Anthony Bourdain

Oven: 400º ~ Yield: 8 servings
Cut chicken into 1 1/2-inch strips. (Chicken slices easily if it is partially frozen.) Combine dry ingredients. Dip chicken strips in butter and then coat in crumbs. Place on lightly greased cookie sheet. Bake for 20 minutes. Turn strips after 10 minutes. You can use different spices such as lemon pepper or barbecue spice instead of the thyme and basil. This works well for a main dish or as appetizers.
