Ingredients: Ginger, 1/2" piece peeled and grated Juice of 1 lime 1 tbsp. citrus or white wine vinegar 3 tbsp. sugar 1 1/2 tsp. chaat masala (available at gourmet food store like Fresh Market or an Asian market, can substitute garam masala) 1/2 tsp toasted cumin (can also throw the chaat masala and the cayenne pepper in the skillet toward the end of toasting 1/8 tsp cayenne pepper 1 tsp kosher salt 1/2 tsp fresh ground pepper 1 bunch thinly sliced scallions 1 jalapeņo, seeded and veined for less heat, finely chopped (optional) 1 pint cherry or grape tomatoes, halved 1/2 cup fresh cilantro, finely chopped 2 tbsp. fresh mint leaves, finely chopped 1 head of green cabbage, halved, cored and finely sliced 1/2 cup roasted, chopped peanuts

Directions:1. Whisk the ginger, lime juice, vinegar, sugar, chaat masala, cumin, cayenne, salt and pepper together in a large serving bowl.
2. Add the vegetables, except for the cabbage and peanuts and toss to combine.
3. Add the cabbage and mix with your hands, ensuring that the other ingredients mix well and cover the cabbage.
4. Sprinkle with peanuts and serve immediately or store covered in refrigerator for up to 4 hours. Add peanuts and mix just before serving. |

Notes: Do not let the laundry list of ingredients and the one unusual spice be intimidating. This is basically a spicy cole slaw with tomatoes and a vinaigrette dressing. I took it to Couples Club once and we had to bring the recipe and bags of the chaat masala to everyone the next month. Having the fresh mint is an important part of the flavor. Note that there is no oil in the dressing
