3 1/2 to 4 pound stewing chicken, cut up
6 cups water
1 teaspoon salt
1/4 cup chopped parsley

1 egg
1/4 cup water
pinch of salt
flour

Directions:
Directions:
1. simmer chicken in water with salt & parsley till chicken is tender and cooked. Strain stock. Add potatoes, carrots and other vegetables to stock. Cook before adding noodles. Once vegetables are cooked, can also add chunks of cooked chicken.to the soup.
2. prepare noodles. Beat egg. Add water and salt Mix well. Add flour a little at a time until dough is stiff. Let set for 1 to 2 hours; then roll out 1/2 dough very thin. Use pizza cutter to cut noodles to desired size. Repeat with remaining dough.
3 add noodles to soup. Cook 10 minutes
4. if there are too many noodles, uncooked noodles can be frozen.
5. can add some left over mashed potatoes for a thicker broth
