1 lb. of shrimp, peeled and deveined
1 1/2 tbsp. of olive oil
1/2 yellow pepper, seeded with ribs removed, cut into 1/4 inch strips
1/2 red pepper
1/3 c. coarsely chopped sundried tomatoes
12 oz. of fresh spinach, washed and dried with stems removed
3/4 c. of olive oil
1 1/2 tbsp. of chopped garlic
1 lb. penne pasta
1 tbsp. grated parmesan cheese

Saute shrimp in 1 1/2 tbsp. oil until pink. In separate frying pan, add 3/4 cup oil and garlic; saute lightly. Just before the garlic goldens, add peppers and tomatoes; cook 3 minutes. Add spinach and cook until wilted. Meanwhile cook pasta in lightly salted water. Combine shrimp and spinach mixture. Drain pasta; toss with shrimp and spinach mixture and parmesan cheese. Sprinkle with more cheese, if desired. Makes 4 servings.
