3 tablespoons sugar
1 teaspoon salt
3 packages yeast (3 tablespoons)
1 cup luke warm water
2 cups potato water
2 cups oil
6 eggs
flour
cinnamon
white sugar

Directions:
Directions:
1. Put warm water into large bowl. add sugar, salt and yeast. Soak for a few minutes.
2. add potato water, oil and eggs. Mix well.
3. add enough flour to make a soft dough. leave in fridge overnight or mix in morning and roll out after supper.
4. Cut off a handful of dough. Roll dough into a circle shape and about 1/4 of an inch thick.
5. mix 3 tablespoons cinnamon into 1 cup of sugar and sprinkle generously on dough. Spread evenly. Cut the circle into 12 - 16 wedges. Start by cutting circle in half; then cut into quarters and depending on the size of the circle, cut each quarter into 3 or 4 wedges. Starting at the wide end of the wedge, roll each portion until the narrow end wraps around the outside of the scuffle.
6. place each scuffle on a cookie lined with a greased wax paper. Space the scuffles fairly close together but not packed as they do rise.
7. Cook at 325 F for 10 - 15 minutes.
