1/2 Lb. butter or margarine
3 Medium onions, finely chopped
3 garlic pieces, finely chopped
fresh ginger, finely chopped - to taste
1 Tsp Zhera seeds
1 Tbsp turmeric
2 Tbsp masala
1/2 Tsp or 1 Tsp cayenne, to taste
1/2 tin tomato paste
1 to 2 Tsp salt
Veggies (Potato, Carrots, Green Beans, Peas, Cauliflower)
Meat (Chicken, Lamb, Goat)


Place butter onions salt and garlic in a large pot. Stir on medium heat for
15
minutes or so. Add the spices but not the tomato paste. Cook with the spices
a long time, stirring frequently. If the mix seems too thick, add a couple
of
ice cubes or a little water. The onions will be hardly noticeable when the
sauce is cooked. Then add tomato paste, chicken, veggies, and cook at 350
degrees for an hour. Add peas or cauliflower half way through. I usually
bake
in the oven, but one can do on the stove top.

Linda: I got this recipe from the mother of a dearly loved friend, Vivienne. It is a basic curry recipe; you can add cut up chicken, or lamb, or beef, or veggies.
