2 Tbls plum jam
2 Tbls soy sauce
2 Tbls clear honey
1 Tbls white wine vinegar
1 Tbls Worcestershire sauce
1 tsp dry mustard powder
1 tsp tomato ketchup
Squeeze of lemon juice

1. Boil lamb, bone in, in pieces in water (enough to cover lamb) with
some vinegar and salt for 20-30 mins then drain & transfer to oven
proof dish. (Lamb can be cooled &/or frozen at this stage)

2. Place all sauce ingredients in a pan and heat; Once all are well
mixed, pour over lamb.

3.Cook in hot oven (180C) until bubbling & crisp, basting frequently.

For a whole breast of lamb I use at least 2 x this amount of sauce.& also, be careful about throwing the lamb water down the sink as it's fatty - I drain into bowl and then skim off hardened fat once cool.

You can oven cook to the end of stage 3 and then transfer to BBQ for authentic burnt taste to be added!
