1 tbsp sunflower oil
1 onion - peeled and diced
1 litre tomato juice or Passatta (tomato paste) + water to make up to 1 litre
4 oz split red lentils
1 tsp ground cumin

Directions:
Directions:
Heat oil in large heavy based pan. Sweat onion, till clear, in oil. Add lentils and cumin to oil & and onion for a couple of minutes, stirring constantly. Add tomato juice and bring to the boil then simmer for 25-30 minutes (or longer).

Freezes well.
