3 small vine-ripened tomatoes, peeled and chopped, with juice
2 T. olive oil
3 cloves garlic, minced
1 jalapeno pepper, minced
3 T. chopped fresh cilantro
1 T. lime juice
½ t. chili powder
¼ t. salt
¼ t. ground white pepper
1 can drained black beans
Feta
Toasted pine nuts

Directions:

Combine the oil, garlic, jalapeno, cilantro, lime juice, chili powder, salt, pepper, and beans. Cover and let sit for an hour at room temperature.

Serve over pasta (warm or cold) and with feta and toasted pine-nuts.
