Bony chicken pieces (backs, necks & wings) from 2 chickens
2 cups sliced leeks
3 stalks celery with leaves, chopped
1 carrot, quartered
2 bay leaves
1 ½ tsp salt
1 tsp whole black peppercorns, cracked
3 whole cloves

Directions:
Directions:
In dutch oven combine all ingredients & 6 cups water. Bring to boil, reduce heat, cover & simmer for 1 hour or till meat is tender. Remove chicken, strain stock, discard chicken & vegetables. If using stock , skim fat or if cold lift off fat. Makes 5 cups.
