(To be prepared the evening before for best results.)
Use 9x13 Pyrex dish.

10 slices of regular or sour dough French bread (not real thick slices)
3 lbs bulk sausage, cooked (regular or hot)
*1 ½ cups grated cheddar cheese
6 eggs (or egg-beater type)
2 cups milk
Salt & pepper to taste
1 can Ortega chilies, chopped (large or small can)
Traditional yellow mustard
*Plus another ½ cup grated cheddar cheese

Directions:
Directions:
Butter & spread mustard on French bread then cut it cubes. Place in slightly buttered baking dish, set aside.
Cook sausage until it changes color, drain & arrange sausage over bread; Add 1 ½ cups cheese, salt & pepper to taste.
In a mixing bowl beat eggs, add milk & pour mixture over layers. Cover with foil & refrigerate overnight.
Next morning, top with ½ cup grated cheese. Cover with foil, at least part of baking time. At 350o bake 50 to 60 minutes in lower shelf of oven.
