2 cups water
½ cup sugar
4 whole cloves
4 whole allspice
4 cinnamon sticks
2 cups orange juice
1 cup lemon juice
2 quarts apple cider

Directions:
Directions:
Put the 2 cups of water in a saucepan with sugar and spices. Bring to a boil, stir and let simmer for 20 minutes. Take off the heat and let the mixture sit for at least two hours. Strain out the spices. You can make this ahead and refrigerate it until you are ready to make the wassail.

Put the spiced syrup, orange juice and lemon juice in a large pot or crock pot. Heat slowly and then add apple cider. Continue to heat to desired temperature. Slow simmer is okay, but don’t let it boil. If you use a crock pot, set on high to get it going, then turn down. I find it easier to heat in a large pot first and then keep it warm in the crock pot. Looks pretty with lemon or orange slices floating it.

You can adjust spices, sweetness or tartness to your preference. My family likes this kind of tart, but you may want to use less lemon juice if you want it sweeter.

Note from Sue: My family has been enjoying this delicious spicy drink on Christmas Eve and New Year’s Eve for years and I often bring it to the church Advent Dinner. I have people that swear it has healing powers if you have a cold or the flu. Not sure if this is true, but the citrus and spices are definitely comforting.
