3 c. elbow macaroni
2 T. grated onion
3 T. butter
1 1/2 T. flour
1/2 tsp. dry mustard
1 tsp. salt
shake of pepper
3 c. milk
3/4 lb. processed American cheese
1 c. fresh bread crumbs
2 T. butter

Directions:
Directions:
*In a large kettle, bring to boil 3 qts. water with salt. Preheat oven to 400º F. Grease 2 1/2 qt. casserole dish.
*Drop macaroni into boiling water; boil uncovered, stirring often with forks, about 9 minutes, or until it looks soft.
*Meanwhile put onion with butter in double boiler. When butter is melted, stir in flour, mustard, salt, pepper, and slowly stir in milk. Cook until smooth and hot, stirring often.
*Slice about 3/4 of the cheese into sauce and stir until melted.
*Put rinsed and drained macaroni into casserole dish. Pour cheese sauce over it, tossing lightly with forks so that all macaroni gets nicely coated. Top with rest of cheese sliced or grated.
*Toss bread crumbs with (2 T.) melted butter. Sprinkle over cheese.
*Bake uncovered for 30 minutes at 400º F.
