Ingredients: pancake: 5 eggs 2 teaspoons sugar 1 teaspoon baking powder 4 1/2 cups milk 1/2 cup water 1 teaspoon salt 1 3/4 cups flour filling: 250 g container 2% cream cheese 750 g container dry cottage cheese margarine 1/2 cup whipping cream

Directions:1. Mix all ingredients for pancake until batter is not lumpy. Batter is very thin to make the thin pancakes. 2. In another container, mash together dry cottage cheese and cream cheese. If not smooth, whip in blender. ( a tablespoon of dry bread crumbs may be added if cheese is too thin). 3. Pour 1/4 cup batter into the center of a lightly greased heated fry pan. Tilt pan to distribute the batter evenly across the bottom. When lightly brown on the bottom and firm on top, remove cakes to a plate. 4. Place a tablespoon of filling in the center of the light side of each pancake and roll like a jelly roll. Arrange cakes in a buttered casserole in layers. Butter each layer with a brush and margarine. 5. bake covered in 325 F oven for approximately 1/2 hour. When they puff up, pour 1/2 cup whipping cream over pancakes and serve. |
