8 c. chicken broth
16 oz. cubed potatoes
16 oz. cubed turnips (opt.)
1 sm. head cauliflower, cleaned and cut up
1 bunch broccoli, cleaned and cut up
1 sm. bag carrots, cleaned and sliced
1 pkg. sliced mushrooms
16 oz. lite Velveeta cheese
Salt and pepper to taste

Directions:
Directions:
Put all ingredients, except cheese, in large pot. Cook over medium heat for about 1 hour or until vegetables are cooked. Add Velveeta cheese in pieces and cook until cheese is melted. Stir quite often so cheese does not stick to bottom of pot.
