1 3/4 c. sifted all-purpose flour
1 T. baking powder
1/2 tsp. salt
1 T. sugar
2 beaten egg yolks
1 1/4 c. milk
1/2 c. oil or melted shortening
2 stiff-beaten egg whites

Sift together dry ingredients. Combine egg yolks and milk; stir into dry ingredients. Stir in oil. Fold in egg whites, leaving a few little fluffs-don't over mix. Bake in preheated waffle baker.

Buttermilk waffles: Substitute buttermilk for sweet milk. Add 1/2 tsp. soda and cut baking powder to 2 tsp.
