4 cups cut up yellow squash
1 medium Vidalia onion diced
1 can mushroom soup
1 cup mayonnaise
2 eggs well beaten
6 ounces grated extra sharp cheddar cheese
1 stack of Ritz crackers
1/4 cup (half stick) melted butter

Directions:
Directions:
Preheat oven to 350 degrees

Cook the squash and onions for 5 minutes. Drain well.

Mix the soup, mayonnaise and eggs together. Fold in the squash, onions and grated cheddar cheese. Place in greased casserole dish. Bake approximately 20-25 minutes until casserole is set.

Mix crushed Ritz crackers with melted butter. Sprinkle over squash mixture and bake approximately 10-15 minutes more until the Ritz crackers are golden brown.
