Watermelon
Salad greens
Nuts (pistachios, pine nuts, pecans or any of your choosing)
Cheese (shaved Parmesan, crumbled bleu, feta or goat cheese)
Prosciutto (optional, can also substitute bacon)
Fresh mint (not optional)

Directions:
Directions:
Thinly slice watermelon. Toast and lightly salt nuts. In a sauce pan saute prosciutto until crisp. MIx salad greens with balsamic vinaigrette (see recipe) reserving about a tbsp. Once salad is tossed place greens on a plate and layer the watermelon on top. Then sprinkle nuts, prosciutto, cheese and mint over watermelon. Drizzle remaining dressing on top and serve.
