1 (16oz) can refried beans
1 cup salsa
12 oz cooked, shredded chicken
1 teaspoon salt
½ teaspoon dried oregano
8 burrito-size flour tortillas
1 ½ cups shredded cheddar cheese
1 (20oz) can Rosarita Mild Enchilada Sauce
Optional: diced tomatoes, sliced olives, sour cream, hot sauce

Directions:
Directions:
In a large bowl, combine beans, salsa, chicken, salt & oregano; mix well.

Spread ½ cup bean mixture in center of each tortilla.

Sprinkle tops with 1 tablespoon cheese.

Roll tortillas, folding in edges.

Spread ¼ cup enchilada sauce into a 13x9-inch baking dish.

Place rolled tortillas, seam side down, in baking dish.

Spoon remaining sauce over enchiladas and bake, COVERED, at 350ºF for 30 minutes.

UNCOVER, sprinkle with remaining cheese & bake 5 minutes longer.

Optional: sprinkle tomatoes & olives over tops of enchiladas, garnish with sour cream & hot sauce.

Makes 8 servings.
