2 Rabbits, cut in pieces
2 Large yellow onions, chopped
Salt & Pepper or any Cajun seasoning that suits you
Cooking oil
Rice

Directions:
Directions:
Cook rice according to package directions. How much you use depends on how much you eat.

Heat at least 1/2" of oil in dutch oven or other heavy pot/pan (add more as
needed)
Season rabbit pieces
Quickly brown rabbit pieces and set aside.
Put onions in remaining oil (add more if you need)
Stir and lightly cook onions.
Return rabbit to pan on top of onions
Cover and cook until rabbit is tender. Serve over hot rice.

Herb had a boss that appreciated wild game but married a city girl.
His boss, Bill, was very excited about being invited over for such a rare treat for dinner. Of course his wife came reluctantly and was persuaded to just try it before deciding she didn't like it. And who do you think got a piece of rabbit with a bit of the ammunition that had been overlooked during dressing the meat? End of story. I still laugh remembering her face.
