2 lb Ground Beef - 85/15 fat content
1 lb Bulk Ground Sausage Meat
1 lb Boneless Chuck, Cubed
2 Jalapeņo Peppers Roasted, Peeled and Minced
3 Anaheim Peppers Roasted, Peeled and Chopped
1 Green Belle Pepper Roasted, Peeled and Chopped
2 Red Belle pepper Roasted, Peeled and Chopped
3 Pablano Chiles Roasted, Peeled and Chopped
2 Large Yellow Onions Chopped
1 Head of Garlic, Minced
2 (15.5 ounce cans) Pinto Beans
2 (15.5 ounce cans) Large Red Kidney Beans
2 Tblsp Butter
2 Tblsp Bacon Grease or Canola Oil will work also
1 Cup Chicken Stock
2 Cups Tomato Sauce
1 Cup Tomato Paste
1-12oz. Bottle Guinness Beer
2 oz. Jack Daniel's whiskey
2 Tblsp. Olive Oil
2 Tsp. Sea Salt
2 Tsp. Ground Black Pepper
2 Tsp. Cayenne Pepper
2 Tsp. Ground Coriander
2 Tsp. Ground Cumin
2 Tblsp. Chili Powder
2 Tsp. Hot Paprika / for less heat use Smoked Paprika
2 Tsp. Granulated Garlic
2 Tsp. Granulated Onion

1. In a large Stock Pot on high heat add Butter and Bacon Grease, then add
Onion, Red and Green Belle Peppers, Jalapeno and carmalize for about
5 minutes
2. Add Ground Beef, Chuck and Sausage Meat, brown for 7-10 minutes
(Try not to break up the Sausage and Ground Beef to finely)
3. Add all the Spices listed and simmer for 1 minute while stirring.
(this is important as it gives the spice a chance to work into the meats)
4. Add Tomato Sauce and Tomato Paste and stir for 2 minutes.
5. Stir in Beer and Chicken Stock then add the Beans.
6. Bring Stock Pot to a low heat and simmer for 2 1/2 - 3 Hours
