I cup of brown lentils
1 tsp. salt
1/4 cup olive oil
1/4 cup parsley, finely chopped (or dried equivalent)
3 cups of water
3 cups of broth (chicken, or any kind)
1 onion, finely chopped
1/2 tsp. cumin
1 garlic clove chopped

Directions:
Directions:
1. Rinse lentils and drain.
2. Place lentils in a large saucepan or small soup pot with the liquids and bring to a boil.
3. Brown the chopped onion in olive oil with garlic and parsley, then add to the lentil mixture.
3. Stir in cumin, salt, and pepper, reduce heat and simmer for half an hour.
4. Stir in lemon juice to taste.
5. Serve with some olive oil drizzled on top and croutons, if desired, for garnish.

This is even better when re-heated the next day! I never was a fan of lentil soup until I learned how to make this in Jordan. It's wonderful!
