1 broiler/fryer (2 1/2 lb.)
2 eggs
3/4 c. flour
1 1/2 tsp. salt
1 tsp. basil, crumbled
1/2 tsp. thyme, crumbled
1/2 tsp. pepper
1/4 tsp. nutmeg
vegetable oil or shortening

Beat eggs in shallow dish. Combine other ingredients in plastic bag. Dip chicken in eggs, then flour mix. Repeat egg and flour process. Allow to sit 15 minutes.

Put 1 " oil in pan on medium heat. When a few drops of water sizzle when flicked in hot oil, add chicken skin side down. Cook slowly, turning once, 20 minutes or until golden.

Reduce heat, cover. Cook 30 minutes more, or until tender. Remove cover last 5 minutes for crunchy crust.
