1 ripe banana
1 egg beaten
1/2 cup sugar
1/4 cup milk
1/4 tsp. salt
1/4 cup oil
1 tsp. vanilla extract
1 cup flour
1 cup quick oats
1 tsp. baking powder
1/2 tsp. baking soda
1/2 cup butterscotch chips

Directions:
Directions:
Preheat oven to 400º. Puree banana. In a bowl combine banana, egg, sugar, milk, oil and vanilla extract. Add flour, oats, baking powder, baking soda and salt. Add chips until blended. Spoon mixture into muffin cups. Bake at 400˚ for 12-15 minutes.

I sometimes change the cup of flour to a half cup whole wheat flour and a half cup white flour, they still taste great!
