1 tbsp extra-virgin olive oil
1 large onion, chopped
1 large carrot, diced
2 ribs celery, diced
1 large potato, peeled and diced
2 cloves garlic, minced
1 tbsp flour
1/2 tsp dry mustard
1/8 tsp cayenne pepper
2 14 oz. Cans broth
8 oz broccoli crowns (stems and florets separated)
1 cup shredded cheddar cheese
1/2 cup sour cream
1/8 tsp salt

Heat oil in large pot. Add onion, carrots, celery until soft (5-6 min) Add potato and garlic, stirring for 2 min. Stir in flour, dry mustard, and cayenne. Stir often for 2 min. Add broth and broccoli stems. Bring to a boil. Cover and reduce heat to med. Simmer, stirring occasionally for 10 min. Stir in florets, simmer covered until the broccoli is tender, about 10 min more. Transfer 2 cups of chowder into bowl and mash. Return to pan, stir in cheese and sour cream.
