1 C Ricotta Cheese
1 1/2 C Powered Sugar
1/2 C Mascarpone Cheese (or whipped cream cheese)
1/4 tsp Almond Extract
1/2 C Chopped Pistachios or other nuts (or candied fruit)
1/2 C Whipping Cream, whipped to stiff peak
Premade Cannoli Shells or Shaped Pizzelles
Chocolate or powered sugar optional for decoration/finish

Directions:
Directions:
Combine first 6 ingredients.
Spoon or use pastry bag to fill shells.
Shells can be dipped in melted chocolate before filling.
Drizzle with more chocolate or dust with sugar.
