1-1/2 c. all-purpose flour
1 c. old-fashioned oats
1 tsp. baking powder
1/2 tsp. baking soda
1/2 tsp. salt
2 tbsp. applesauce
3/4 c. light brown sugar
2 large eggs
1 c. mashed bananas (about 3 bananas)
6 tbsp. peanut butter (either creamy or crunchy- if crunchy add 2 more tbsp.)
1 c. low fat buttermilk

Preheat oven to 350 degrees F. Line 18 muffin cups with paper liners. In a medium mixing bowl, combine the flour, oats, baking powder, baking soda and salt. Stir together with a fork to blend. In a large mixing bowl, whisk together the remaining ingredients. Add the dry ingredients to the wet ingredients, and mix until fully blended. Divide mixture between the muffin cups and bake for 18-20 minutes (toothpick inserted in center comes out clean). Allow to cool completely.

They are very difficult to get out of the paper liners if you try to eat them while they're warm but they sure are good!
