3 12-oz. Bags of cut green beans (Kroger brand is fine)
1 large onion coarsely chopped
1 28-oz. Can whole tomatoes
1 14.5-oz. Can whole tomatoes
5 garlic cloves, minced through garlic press
1 cup chopped parsley
½ teaspoon salt
Coarsely ground pepper

Sauté the onion until 95% of the pieces are clear. Then over the pan, mash the garlic cloves through a garlic press. Sauté the onions and garlic for 3-5 minutes so that the garlic is cooked and all onions are clear. (You don’t want to overcook the garlic or it’ll lose its potent flavor, nor do you want any of the mixture to brown.)
Drain the juice from the tomatoes and add the tomatoes to the onion and garlic mixture. Add salt and pepper. Mixture should be thick and slightly chunky looking so that it heaps in a spoon—not thin, like a sauce. Cook 15 minutes.
In a separate pan, cook the green beans according to the package directions, minus a couple minutes.
Drain the water from the green beans and combine them with the onion/garlic/tomato mixture. Allow to cook 3-5 minutes, to thoroughly combine flavors and heat through.
Turn the heat off on the burner and add the chopped parsley to the mixture and stir.
