8 green pepppers
1 T vegetable oil
1 lb ground beef
1 c chopped onion
1 T minced fresh parsley
¾ t garlic
½ t dried thyme
¾ t salt
½ t black pepper
½ t dried basil
⅛ t cayenne
1 lb can diced tomatoes (not petit diced)
1¾ c cooked rice
2 T Worcestershire sauce
½ c grated sharp cheddar cheese
⅓ c grated parmesan cheese

Cut off and discard the top fourth of the green peppers. Remove the seeds and membrane. Place the peppers upright in ⅓ to ½ inch salted water in a heavy pot. Bring the water to a boil and cover tightly, then lower the flame and cook for exactly 5 minutes. Remove the peppers, drain them thoroughly, and set aside while preparing the stuffing.

In a large skillet heat the vegetable oil and saute' the ground meat and onion until brown. Add the parsley, garlic, thyme, salt, pepper, basil, and cayenne. Continue cooking and stirring over low heat for a few minutes, then add the drained canned tomatoes. Cook for 6 to 7 minutes longer, breaking up the tomatoes with a wooden spoon while cooking. Add the cooked rice and Worcestershire and mix well, then cover and simmer for about 10 minutes. Uncover, turn off the heat and add the cheese. Blend thoroughly.

Stuff the peppers with the meat mixture and bake uncovered in a preheated 350º oven for 30 minutes.
