6 potatoes, peeled and boiled
2 c whole milk
2 sticks butter
½ c flour
2 c sharp cheddar cheese, grated
½ c parmesan cheese, grated
salt and pepper to taste

Peel potatoes and cut into large cubes. Boil until barely tender.

In medium sauce pan, heat milk until simmering. In medium saute' pan, melt the butter and slowing incorporate the flour, whisking constantly over low heat to make a blond roux. Slowly incorporate 1 cup of the heated milk into the roux, whisking constantly. Cook over low heat for 10 minutes, until the mixture becomes paste-like. Slowly incorporate the remaining milk and whisk until smooth. Add more cold milk to mixture if it won't smooth out.

Add the potatoes, cheddar cheese and half of the parmesan cheese to the sauce. Season with salt and pepper.

Transfer to an oven-proof baking dish and top with remaining parmesan cheese. Bake in 400º oven until hot and crusty, about 20 minutes.
