2 4-oz goat cheese logs
¼ c flour
½ t pepper
1 egg
½ c panko breadcrumbs
4 T olive oil
romaine lettuce
cherry tomatoes
mango slices
candied cashews
artichoke hearts
Raspberry Vinaigrette
grilled chicken breasts

Directions:
Cut each goat cheese log into 6 slices. Combine flour and pepper in shallow dish. Whisk egg and 2 tablespoons water in another dish. Place panko in a third dish. Dredge goat cheese in flour, dip in egg mixture, and dredge in panko. Arrange in a single layer pan, cover and chill 30 minutes to 4 hours.

Cook half of goat cheese in 2 tablespoons hot oil in large nonstick skillet over medium heat 2 to 3 minutes on each side. Repeat with remaining olive oil and goat cheese.
